Hi Everyone! My name is Jenni and I’m a plant based Registered Dietitian. I am an admitted vegetable addict, mostly vegan (~97%), energetic former Chicagoan and recent Coloradan with a devotion for healthy eating. I live a lifestyle of eating healthy,  daily physical exercise, meditation, volunteering, supportive friends and family, and a constant practice of self-improvement. My passion and desire to share my knowledge, creativity, resourcefulness (resourcefulrd.com) and support to others is what drives me to do my best. I love revising recipes and testing them out on friends and family and watching their surprised faces when I tell them it’s healthy!  I invite you to share my love for healthy eating and feel the difference!

So many people struggle with the will power to say no to sweets, simple carbs, and salty foods. Once in a while is ok, but on a daily basis it sets you up for a myriad of health problems. I want to show you that cooking/baking healthier is not as difficult as one thinks. Prioritizing your time to prep ingredients, adding the right herbs and spices, and using your oven, grill, and appliances to do the work, makes eating healthy totally doable. Following my exact lifestyle doesn’t work for everyone. Choose what works for you. But I guarantee when you EDIT your eating pattern (method, system, routine), you will have more energy to do the other things you love. It’s never too late. Be a role model, dare to eat different, take charge of your health now!

I cook mostly vegan with the occasional vegetarian dish thrown in. Knowing it’s hard for most people to eat this way most days, I planned this site to help you make the transition slowly with 3 stages of recipes: healthy, healthier, and healthiest. What does that mean? Well, depending on where you are in your life and what you need to modify, you can choose to ease into the vegan dishes or slowly work your way towards them. Either way, you’re going to eat healthier while trying and you’ll love it!
